The Flambé

It’s both exciting and dramatic. The flambe’ is the process of adding alcohol to food and then igniting the food. Despite the WOW factor and entertainment, we must not forget the real goal of the flambe’ which is to burn off bitter alcohol and impart rich flavor.

Always use caution with the flambe’ which could result in a trip to the burn unit and/or a response from the nearest fire department.

Never flambe’ with any liquor which is higher than 80 proof. Those liquors which are 120 proof are not recommended because they are highly flammable. Liquors which are lower than 80 proof may be difficult to ignite.

Do not stand over an open flame and pour alcohol from a bottle. The flame may flow into the bottle and cause it to explode.
